Sambar South Indian Style



Lentils - 100 gms

Roast separately and powder

Coriander - 20 gms
Red chili- 5 gms
Split bengal gram- 3 gm
Split black gram - 3 gm
Fenugreek-3 gm
Asafoetida-1/2 tsp

Vegetables used:

Ladies finger - 30 gm
Onion , small - 50 gm
Brinjal , small -1
Drumstick - 4
Tomato -3, sliced
Green chili -2-3
Potato-3 medium size, sliced
Ash gourd- 200 gm ,sliced

Turmeric- 1/4 tsp
Tamarind - to taste
Salt to taste

To temper

Curryleaves - 1 sprig
Red chilies- 2
Mustard seeds-  a pinch
Fenugreek - 1/4 tsp
Oil - 1 tsp
Onion,small - 3-4


Boil dal.
Add salt to taste.
Add vegetables cut into even-sized pieces.
Add powdered spices, and cook till vegetables are soft and tender.
Add tamarind juice extracted in a cup of warm water.
Bring it to boil.

Heat oil in a pan, I have used coconut oil.
Add mustard seeds,sliced onion,broken red chili, curryleaves and fenugreek.
While onion become golden brown color, pour it over sambar.
Stir well.Serve it
