Yum raw plantain stir fry


Raw plantain -2
Turmeric powder - 1/4 tsp
Salt to taste
Water- 3/4 cup or required enough to cook the plantain.
Coconut oil - 2 tablespoons
Mustard seeds- 1/2 tsp
Onion-2 medium-sized, sliced into straight pieces, thin pieces
Minced garlic- 1/2 tsp
Curry leaves - 2 sprig
Chili powder - 1/2 - 3/4  tsp
Method of preparation

Peel the outer layer of skin of the raw plantain.
Cut the plantain into small cubes.
To prevent the raw plantain from changing its color, dip it in plain water.
Transfer the sliced plantain to a deep-bottomed vessel.
Add turmeric powder, salt to taste, and water required enough to cook the plantain.
Cook it for 4- 5 minutes or till it is done.
Heat oil in a pan, here I have used coconut oil.
Add curry leaves, pop mustard seeds.
Add sliced onion, saute it occasionally till it reaches golden brown.
Add minced garlic, and saute again for 2 minutes on low flame.
Add chili powder and saute again on a low flame till its raw smell/flavor goes.
To this, add cooked plantain, mixing everything nicely cook for one minute on alow flame.
Add more salt if required.
Serve it as a side dish with Rice.
