Mixed Fried Rice- restaurant style

Rice -500 gm, I have used Basmati Rice

Leeks -  250 gm

Carrots - 250 gm

Frozen green peas - 10 gm

Cabbage - 250 gm

Onion - 200 gm

Celery - 50 gm

Eggs- 4

Sunflower oil

Garlic cut into small pieces 

Green chili 3 

Spring onions cut into small pieces 

Capsicum 2 cut into small cubes

Chicken cut into small cubes -225 gm

Pepper powder - as required

Chili sauce - as required

Tomato ketchup -100ml

Soy Sauce - 50 ml

Beef -250 gm

Prawns - 225 gm

Pork - 200 gm

Turmeric powder - a pinch

Salt - to taste


Cook basmati rice with a little salt, water, and 1 tsp of sunflower or olive oil till 3/4th is done.

Shell prawns. Remove intestines. Wash well. Add turmeric powder, salt to taste and fry. Clean pork pieces. Pressure cook it with peppercorns and salt to taste. Cut it into cubes. Shred vegetables.

Cut and clean beef. Cook it with pepper powder, salt to taste in a pressure cooker.

Then  cut it  into small pieces/ cubes.

Marinate chicken with pepper powder and salt to taste and fry it. 

Beat eggs and add pepper powder and salt.

Heat oil in a pan add sliced vegetables, sliced garlic, capsicum, celery, and spring onions, and peas(should become bright green color), and saute it for a few minutes. Add eggs and make scrambled eggs. Add soy sauce, tomato sauce, and green chili sauce, pepper powder to the scrambled eggs and the (sauteed) vegetables. Add cooked rice, and prawns to this and salt to taste and mix everything nicely.

 Add fried chicken pieces, and pork pieces, beef slices and mix everything again nicely. Cook for a minute mixing everything nicely. Serve it.

 notes: you can even substitute Sunflower oil with butter. you can add Garam Masala or five Spice powder to this.

Rice should be cooked before 2 hours  and it should be cooled enough , as freshly cooked rice will not work properly.

It is good to prepare Fried Rice always in a Chinese wok, And also that on  high heat.
