Yum Glace fruit cake


Castor sugar-1/2 cup
Finely chopped glace apricot -1 cup-250 gram
Finely chopped glace orange-80 gram
Finely chopped glace ginger-90 gram
Finely chop glace fig-100 gram
Finely chop glace cherries-80 gram
Finely chop glace pear-60 gram
Plain flour-225 gram
Self-raising flour-75 gram
Ginger wine-60ml

Ginger Syrup

Ginger wine- 1/2 cup
Water- 60ml
Caster sugar-55 gram
Lemon juice- 2 teaspoons

Method of preparation

1.Preheat oven to 150 degrees C /130 degrees C fan-forced.
Grease a round cake tin.
2.Beat sugar and butter in a small bowl with an electric mixer until 
just combined. Add eggs one at a time and beat nicely.
Transfer this mixture to another large bowl, Stir in fruit then sifted flours, and combined milk and wine, in two batches.
Spread mixture into cake tin
Bake about 2 and a 1/2 hours.
Meanwhile, make ginger syrup. Pour hot syrup over hot cake in pan.
Cover with foil.Cool in pan.
Ginger syrup;

Stir ingredients in a small saucepan over low heat without boiling, until sugar dissolves. Bring it to a boil.
Boil, uncovered, without stirring about 2 minutes or until syrup thickens slightly.
