Malabar style Rice pan cake /Malabar Rice Pathiri / Ari pathiri

 


                                                   

Yum Ari pathiri




Ingredients

Roasted rice flour-2 cups
Water-600 ml
Coconut oil or Coconut milk- 2tsp or 2 tbsp
Salt- 3/4 tsp

Method

Boil water in a vessel with salt.
Add coconut milk or coconut oil.
Add the roasted rice flour in the center of the boiling water.
Allow water to boil for some time. Do not stir during this time.
After getting almost covered,  stir with a wooden spoon so that the flour gets moisten evenly.
After this, turn off the flame and cover the vessel for 3- 5  minutes.
Knead the flour nicely when it is hot itself.
After kneading the dough to a smooth dough, roll the dough  into  
small balls.
Using a rolling pin, roll each ball into thin round pathiri.
Heat a Tawa or a non-stick pan.
Place the rolled pathiri over it.
Cook till small bubbles comes on one side.
Then turn over to the other side and do the same procedure.
Serve it.
