Lime Cake

  Lime Cake


Softened Unsalted butter - 180 grams
Sugar - 1 cup
Eggs, lightly beaten-2
Finely grated zest of 1 lime
Self -raising flour- 1  1/4 cup
Almond meal- 1/2 cup
Sour cream- 1/4 cup
Lime juice- 2 tablespoons
Cream and lime zest to serve
For a change, use a lemon or an orange instead of lime.


Pre-heat oven to 160 Degrees Celsius. Lightly grease and line an 18 cm square cake tin.
Cream butter and sugar.
Beat in zest and sugar and fold in sifted flour, almond meal, sour cream, and lime juice.
Pour and spread the batter into the prepared tin and bake for 1 hour.
Allow it to cool slightly.
Then cut into squares and serve it with a dollop of cream and a few shreds of lime zest.
