Carrot and banana cake



Yum Carrot and banana cake


You need approximately four medium carrots(480 g) and two large overripe bananas(460 g) for this recipe.

Plain flour- 185 g
Self- raising flour -75 g
Bicarbonate of soda- 1 teaspoon
Mixed spice- 1 teaspoon
Ground Cinnamon- 1  1/2 teaspoon
Firmly packed brown sugar-220 g
Coarsely chopped walnuts-3/4 cup-80 g
Eggs-3 beaten lightly
Coarsely grated carrot- 2 cups
Mashed banana-1 cup
Vegetable oil-250 ml


Preheat oven to 170 Degrees C /150 Degrees C fan-forced.
Grease base and side of 24 cm-round cake tin; line base with baking paper.
Sift flours, soda, spices, and sugar into a large bowl. Stir in walnuts,
egg, carrot, banana, and oil; pour mixture into tin.
Bake cake about 1 and 1/4 hours. 
Baking time may vary, as it depends oven used.
