Kerala style Egg stew





Yum Kerala style Egg Stew



Ingredients


potato-4 medium size

carrot-3

Egg-4

Green chilly-4-5

Curry leaves

onion-3 sliced

ginger-a small piece 

cinnamon-4

pepper-28-30

cloves-6

cardamom-6

coconut milk (thick)2 cups

coconut milk-(thin)1 1/2 cups

salt- as required



Method

First powder all those masalas from cinnamon to cloves using a mixer grinder.kept it aside

meanwhile in a pressure cooker, cook potatoes and carrots.

heat oil in a pan, add curry leaves, onion,green chillies and ginger and saute everything nicely

after 2 mins, add those powdered masalas and saute everything again nicely.

Then add coconut milk and add cooked and sliced potatoes and carrots.

Then add Eggs.

cook again for 5-6 mins and serve hot with paalappam or bread or idiappam
