Kerala Style Cabbage Thoran

Cabbage is  a very healthy vegetable.

                                      





There are more or less 7 varieties of cabbage, including the following:

Napa cabbage



Napa or nappa cabbage is a type of chinese cabbage
Napa cabbage is a cool season annual vegetable which grows best when the days are short and mild.
It contains many antioxidant plant compounds and is high in dietary fiber.It help to lower LDL levels. Napa cabbage is an incredible resource of folic acid and Vitamin B.

Cannonball cabbage




More commonly known as green cabbage


January king cabbage


It is a curly-leaved Cabbage mainly available in January


Red Cabbage:


Also called Purple Cabbage. It is widely used in salads.

Red cabbage has a good mix of vitamins and minerals, especially folate, which is essential during pregnancy and also helps the body to produce red blood cells. It also contains vitamin C, which helps protect our cells by acting as an antioxidant, and potassium, which we need for a healthy heart.



Choy sum
   

   Choy Sum is rich in carotene (pro-vitamin A), calcium, dietary fibre, potassium & folic acid, as well as high in vitamin K, which can be beneficial in the prevention of such diseases as osteoporosis, heart disease .It is an excellent source of water-soluble antioxidant, vitamin-C


Bok choy



Bok choy also contains vitamin C, vitamin E, and beta-carotene. These nutrients have powerful antioxidant properties that help protect cells against damage by free radicals.


Savoy cabbage
   

This food is very low in Saturated Fat and Cholesterol. It is also a good source of Protein, Thiamin, Calcium, Phosphorus and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Folate, Magnesium, Potassium and Manganese.


We ,malayalees mostly cook cabbage as Kerala style cabbage thoran or as cabbage mezhukupuratti 
Along with cabbage ,carrot is also added in some cases

Cabbage is most often consumed as soup that helps in weight reduction.

Cabbage Is an excellent Source of Vitamin K.

Eating cabbage is an inexpensive way to add vitamins K and C, as well as antioxidants, to your diabetes-friendly diet. 

Cabbage also contains manganese, fiber, and vitamin B6. 

Here I am going to specify the recipe of kerala style cabbage thoran  .
  
     

Ingredients

Cabbage- 1/2 of one medium sized cabbage(shredded or finely chopped)

shallots 10-15

or onion- 2 medium sized 

Grated Coconut- 1/2 cup

Garlic- 3-4 pods

Curry leaves

Cumin seeds-1/2 tspoon

Green chilly- 3-4

Turmeric Powder- 1/4 tspoon

salt as required

Coconut oil

Mustard Seeds 

Method

Mix grated coconut with shallots or onions ,garlic,cuminseeds,turmeric powder using a Mixer.

Heat oil in a pan, add mustard seeds and curry leaves.
when it splutter add green chillies and shredded  cabbage

Saute it and  cook for a minute.

After that add the coconut mixture and mix everything

Add salt to taste and mix everything nicely.

Close the pan with a lid,cook on low flame,Stirring everything occasionally.

Once the cabbage is cooked,open the lid,Stir fry  for another 2 more minutes.

Serve hot with rice.
