Egg Vindaloo

For vindaloo spice paste

Cumin seeds – 1 tspn

Cinnamon stick – 1 small piece

Cloves – 2-3

Black pepper corns – 1 tspn

Mustard seeds-1 tspn

White vinegar – 2 tbspn

For egg vindaloo,

Eggs – 2, large

Oil – 2 tbsp

Onion –3 chopped

Green chilli – 2, chopped

Tomatoes – 2, chopped

Water – 1 cup

Salt – to taste

First grind all the spices needed for vindaloo paste using a mixer grinder to a fine powder.

Add white vinegar to it and make it a smooth paste.

Heat oil in a pan, add this vindaloo paste to it and saute for a few minutes.

Then add sliced onion, green chilly .Saute it nicely till the onion becomes slight golden brown in color

Then add tomatoes and again saute well.

Add required amount of salt and water.Allow it to boil and after that add egg.Cook for few more minutes.

Serve it with rice, chappathi, appam , idiappam
